For the Multimedia Showcase, can the maximum seven-minute clip be a reel edited specifically for the Summit, or must it be a literal excerpt from the finished product?

The seven-minute maximum can be an edited reel or portion of the finished product. It is your choice. The only limitation is that it cannot exceed seven minutes out of the 15-minute total amount of time allotted for the presentation.
